Chenpi is associated with dried citrus peel, while Xinhui chenpi has a specific local fruit and processing story. Opening, turning, drying and attentive storage form part of that craft. A colour or aroma cannot verify an age claim by itself. Look for a producer who can explain the harvest and storage behind the particular peel.
