What to do

Washed, prepared greens, your usual dressing ingredients, a small bowl and yuzu juice.
What to do
- Make a small test portion of your usual dressing, using a little yuzu juice for the citrus element. Keep the remaining ingredients familiar.
- Dip a leaf into the dressing and taste them together. Adjust the balance a little at a time; the goal is a dressing that suits the greens, not the strongest possible citrus flavour.
- Dress only the amount you are about to serve, then toss gently. Offer any remaining dressing separately and follow ingredient storage directions for leftovers.
Try another texture
The same test can work with a familiar cooked vegetable served as you normally prepare it. Taste on that vegetable rather than assuming the salad balance will be identical.

Plain yogurt or another familiar dessert, a clean spoon and yuzu preserve intended for eating.
What to do
- Read the preserve's ingredient and storage information. Taste a little to understand its sweetness and the texture of the peel.
- Spoon a small amount beside the yogurt or dessert, leaving part of it plain. Try a bite of the two together before mixing the whole bowl.
- Add more only if the pairing needs it. Close the jar and store it as directed, using a clean spoon each time.
