Matcha

Matcha is a powdered green tea whisked into a drink. Expect a vegetal aroma, a savoury note and some bitterness, with the balance varying between products. Water makes the tea character more direct; milk changes the texture and softens the overall impression.

Pure powder
A straightforward starting point when you want to choose the water, milk and sweetness yourself. Check that the ingredient list matches what you expect.
Blended drink powder
Some mixes include sugar, milk powder or other ingredients. They can need a different method from pure matcha, so follow the pack rather than a general whisking recipe.
Ready to drink
A prepared matcha drink offers convenience. Compare the full formulation, serving information and storage directions instead of judging by the green colour alone.
A place to start.
Sift into a bowl
Use the amount recommended for your matcha. Sifting breaks up clumps before water is added. As one reference, Ippodo's classic preparation uses 2 g of matcha.
Add water and whisk
Ippodo's reference method adds 60 ml of water at 80°C, then whisks briskly in an M-shaped motion for about 15 seconds. Treat this as one maker's method; your product may specify another.
Taste, then make it yours
Taste the whisked tea before adjusting. For a milk drink, prepare the tea first and add your preferred milk. Follow the product's serving advice and adjust sweetness to your taste.

Look for preparation guidance for drinking with water, making a latte or cooking. Choose for the way you will actually use the powder.
Read beyond the name
Compare the ingredient list and serving information. Matcha contains caffeine; a flavoured or sweetened blend may also contain ingredients you wish to avoid.
Protect the aroma
Keep the pack closed and follow its storage directions. Ippodo advises avoiding heat, humidity, direct sunlight and strong smells. Buy an amount you will use while its flavour is fresh.
